Hey Everyone! Get ready for your mouth to water and your tastebuds to tingle. This post, we’re featuring Scott Breazeale (left) and Joe Nader (right), the dudes behind Guilt Chocolates. Guilt Chocolates specializes in hand rolled truffles, hand painted encased bon bons, and specialty bars. The duo also run Hardcore Meals, a meal prep company that provides nutritional meals geared towards athletic performance.
Scott is a highly trained pastry Chef also skilled on the savory side. Both Joe and Scott are former chefs of the Detroit Lions. Guilt Chocolates, started in 2018 when they kicked off their business for Valentine’s Day. Let me give you the run down.
Joe Nader was nice enough to show me around their facility in Redford, MI where all the Guilt Chocolate magic happens. I got a “behind the scenes” look at the bon bon making process. The kitchen is climate controlled since chocolate is very fussy and has to be handled at different temperatures. Joe Nader walked me through the whole process, from start to finish, including melting the chocolate, pouring it into the molds, encasing the bon bons, and last, painting the bon bons and adding the finishing touches.
Next, came the fun part, tasting the chocolate!
The Lavender bon bon was my favorite! Featuring a white chocolate ganache. Light, lavender flavor without being too floral or herbal. The white chocolate was the way to go with this bon bon. Very nice.
85% Hulia Columbian: Dark chocolate ganache. Simple, delicious dark chocolate bon bon. I really liked the light blue design against the dark blue coating.
Orange Basil: (Pictured: 3rd row, far left). Orange, basil, milk chocolate ganache. One of Guilt Chocolates most popular bon bon. The flavor combo of the orange and basil was delicious. The orange was present, but not overwhelming. The basil was fresh and light.
Jasmine: (Pictured: 3rd row, middle). Jasmine tea, dark chocolate ganache. I knew the combo of jasmine and dark chocolate would be good. The jasmine was subtle and melted with the creamy ganache.
Guilt Chocolates collaborates with Detroit businesses, which is really cool. Guilt Chocolates has a 4 pack of their bon bon featured on Sugar House’s dessert menu. These bon bons include liquor inside the chocolate and feature Two James Dr Bird Rum.
Guilt Chocolates also collaborates with Two James and Bad Luck Bar for drink pairings. Guilt Chocolates work with Two James Distillery and Bad Luck Bar to develop bon bons that pair well with the notes and flavors in the featured spirit. Joe and Scott both love booze so you can expect to see more of these pairings in the future.
Currently, Guilt Chocolates does not have a retail storefront, but they do partner with retailers so you can get your hands on their delicious chocolates. You may have seen Guilt Chocolates at their pop up in Capital Park for the holiday season last year. Guilt Chocolates accepts online orders, but all orders are currently on hold due to extreme heat for the Summer. Ordering will pick back up in the Fall and for the holiday season.
