Buffalo Cauliflower Tacos

Easy one pan vegetarian/vegan tacos perfect for a week night meal

Ingredients
  

  • 1 head cauliflower
  • 1/2 cup Frank's Red Hot (or your fav buffalo sauce)
  • 2 tbsp olive oil
  • 1 tbsp garlic powder
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1 tbsp onion powder
  • 1/4 cup fresh cilantro
  • 1/2 cup diced onion
  • 1 cup shredded cheese
  • 1/2 cup diced pineapple

Instructions
 

  • Preheat oven to 375 degrees. Wash, strain, and break up one head of cauliflower into bite size florets
  • Toss in olive oil and roast in oven for 25 min
  • Take out, flip and add seasoning
  • Toss with Frank's Red Hot
  • Put back in the oven for another 15 min or until golden brown (be careful not to burn)
  • Take out cauliflower, set aside and prep toppings (onion, pineapple, cilantro, cheese)
  • Assemble tacos and enjoy!

Notes

Tip: Julienne carrot, shredded cabbage, and pineapple add nice crunch and sweetness
